I’ve made these cookies a million times, including after school when I was tired and needed something sweet, on days when I have to lent and have to eat vegan, and on days I just need a quick pick-me-up. It only takes around 5 minutes to make AND can be made in microwave!

Ingredients (makes around 6 small cookies):
Around 1/4 - 3/4 cups of rolled oats/oatmeal
1/4 teaspoon vanilla extract (optional)
1/2 tablespoon honey (optional)
1/4 teaspoon cinnamon (optional)
Marshmallows to top (optional)
Any other flavoring you might want, such as coconut extract with coconut flakes, cranberries, etc.
Preheat oven to 350 degrees Fahrenheit/ 176 degrees Celcius. In a bowl, mash the banana using a fork until it becomes a thick paste; it will probably have a few lumps but try to make it mostly smooth. Mix in any flavorings/spices you want, and add in the oats/oatmeal. Mix until well combined. On a cooking sheet with parchment paper/sprayed with oil or on a plate, spoon mixture into cookie shape. Cook in oven for approximately 7-12 minutes (you can add marshmallows on top after 7 minutes and put back in oven until marshmallows are soft and brown); if placing in microwave, put on high for around 5 minutes or until solid. Serve and enjoy!
